But the most basic one that can best embody the true taste and aroma of black tea is the pure black tea and black tea with milk. Then how to make a cup of pure black tea, these are some methods can be seen as references.

The first step, make the fresh water boiling. The water used to make black tea should be low in calcium and magnesium. Fresh water and water in high oxygen, such as, mountain spring water, well water and stream are most suitable for making tea. The pure water available on market is also can be used to making tea. The tap water can’t be used to making tea because it contains chlorine, so it needs to be put for a night in the container. Water has been boiled twice used to making black tea will reduce the aroma and color of black tea. Therefore, the fresh water boil for about half minutes is the best.

The second step is to preheat the teapot and teacup. The tempting aroma of black tea is mainly emitted by the steam. If put boiling water in the cold teapot and teacup will lower the temperature, so the aroma can’t volatilize. Therefore, before making tea we should preheat teapot and tea cup, and put the boiling water into teacup, and pour it out when tea has already made.

Take the right amount of tea into teapot. In principle, a spoonful of tea is used to make a cup tea. Broken black tea and bag tea can be only used for a time.

Then put the boiling water into the teapot. Pour the boiling water into teapot, because there are some high boiling compounds and oxidative polymerization of polyphenols in the elements of aroma in black tea. Keep the boiling water into teapot for about 3 to 4 minutes. If brewing tea for a long time, the tannins and catechins in black tea will fully release, so tea will taste a little bitter. If brewing tea for a short time, then the release of amino acids will be inadequate, the sweet flavor of black tea will not be tasted. The small broken black tea can be brewed for 1 to 2 minutes.

After these steps above, a cup of sweet and fragrant black tea is made. You don’t have the need to go to tea house for a pure black tea; you can make it at home.

Seven Cups, Inc. of Tucson, Arizona, will lead three guided tours of China’s back-country tea gardens in 2009. Designed for tea connoisseurs, the tours are scheduled during the harvest and production of Green, Yellow, Oolong, Black, and Puer teas. The tours are physically demanding and will take participants to remote areas seldom visited by foreign tourists. They will involve traveling on foot, by bicycle, bus, train, and bamboo boats.

Over the past 10 years, Seven Cups has cultivated relationships with tea masters throughout China, personally sourcing an award-winning catalog of more than 100 rare Chinese teas. These teas are available online and at Seven Cups’ tea houses in Denver and Tucson.

Limited to 10 people per tour, each group will be personally led by Austin or Zhuping Hodge, the founders of Seven Cups. Austin Hodge is the first American to be published in the China International Tea Culture Institute’s journal, and Zhuping Hodge is a certified Chinese tea master. Seven Cups was recently featured in Fresh Cup Magazine’s 2009 Tea Almanac for its efforts to source and promote authentic Chinese tea. The company has also been granted an exclusive contract to supply Tribute-grade teas to the new Lu Yu Tea Museum in Changxing, Eastern China.

Tour participants will spend the majority of their time engaged in intimate meetings with Chinese tea masters in the masters’ own gardens and workshops in the Chinese countryside. These are the tea masters who make tea for Seven Cups.

Tours begin in the Spring and will continue into July. All tours will be 14 days inside of China. The Spring Tea Tour (March-April 2009) will focus on Green teas, with side trips to visit Yellow and Black teas that also are harvested early in the Spring. The Summer Tea Tour (May-June 2009) will feature Oolong teas and Black teas that are harvested early in the summer. Finally, the Puer Tea Tour (July 2009) will focus on the puer teas of Yunnan. The tours are priced from $ 4,350, which includes roundtrip airfare from Los Angeles to China, all land transportation in China, all hotel and accommodations, and all meals in China.
